Sakai Akazaw's Fuji Mountain series sports a White Steel, “Honyaki” blade designed with an aesthetically pleasing pattern that takes after Japan’s Fuji Mountain. Some of the blade steels of the knives in this series also sport a “Crescent Moon” or “Sun” print on them to further enhance the aesthetic appeal of the knife. All of the knives in Fuji Mountain series are sashimi/slicer knives meant to seamlessly, delicately and precisely slice through raw protein. Because the blade steel in this series is White Steel for every knife, the knives rust if exposed to air and water and should always be properly dried off before being stored away. The handles of the knives in this series are all traditional, octagonal hardwood handles—all with a unique design—that are embedded with a luxury silver bolster.
Recommendation: The Fuji Mountain knives are rare and limited knives that are created with a lot of detail and care all around. They are largely recommended for professional cooks/chefs, or for collectors who are proficient at sharpening and maintaining knives.
